Ingredients:
1/2 c butter, softened
1/2 c peanut butter
1/2 c shortening
1 c sugar
2 large eggs
1 tsp vanilla extract
2 1/4 c all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1 c crushed captain crunch
Additional sugar
Directions:
Preheat oven to 350 degrees. Cream butter, peanut butter, shortening and sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour, captain crunch, baking powder and baking soda; gradually beat into creamed mixture.
Shape into 2 inch balls. Roll in additional sugar. Place on greased baking sheets; flatten with a glass. Bake until set, 15 to 20 minutes. Remove to wire racks to cool.
