Ingredients:
Cake:
2 cups all-purpose flour
2 cups sugar
1 tsp. baking soda
1 tsp. ground cinnamon
2 cups Dr Pepper
1 cup butter, cubed
1/4 cup baking coca
2 large eggs, room temperature, lightly beaten
Icing:
1/2 cup butter, cubed
1/3 cup Dr Pepper
1/4 cup baking cocoa
3 3/4 cups confectioners’ sugar
1 tsp. vanilla extract
1 tsp. ground cinnamon
1 cup chopped pecans, toasted
Directions:
Pre-heat oven to 350°. Grease a 15x10x1-in. baking pan. Whisk flour, sugar, baking soda and cinnamon. In a saucepan, mix Dr Pepper, butter and cocoa; bring just to a boil. Add to flour mixture, stirring just until moistened. Whisk in eggs. Transfer to pan. Bake until a toothpick inserted in center comes out clean, 18-22 minutes.
For icing, mix butter, Dr Pepper and coca in a saucepan; stir over medium heat until smooth. Transfer to a bowl. Beat in the confectioners’ sugar, cinnamon and vanilla until smooth.
Remove cake from oven; place on a wire rack and let cool completely. Spread frosting evenly over cake; sprinkle with pecans.
