Ingredients:
- 5 tablespoons salted butter
- 16-ounce bag mini marshmallows
- 4 teaspoons grated lime zest
- 1/4 cup fresh lime juice
- 5 cups crispy rice cereal
- 1 cup graham cereal
- 4 ounces white chocolate
- 1/2 teaspoon coconut oil
- 1 drop green food coloring
Instructions:
- Butter a 9×13-inch baking dish. Melt 5 tablespoons of butter in a large pot over medium heat. Add 2/3’s of the marshmallows and stir until they’re melted. Remove from heat and stir in 3 teaspoons of lime zest and ALL of the lime juice.
- Add the graham cereal, rice cereal, and rest of the marshmallows into the pan and fold until combined. Pour the mixture into the buttered baking dish and press evenly. Set aside to cool.
- Melt the white chocolate in a heatproof bowl, then add the coconut oil and remaining lime zest. Stir until combined, then add and stir in the food coloring.
- Drizzle the white chocolate mixture over the cereal treats and refrigerate until cooled. Cut into pieces and enjoy!
