Ingredients:
- 2 cups sugar
- 1 cup butter, softened
- 2 eggs
- 2 teaspoons grated lemon peel
- 3 tablespoons lemon juice
- 2 and 3/4 cups all-purpose flour
- 1 cup quick-cooking oats
- 2 teaspoons baking powder
- 1/4 teaspoon salt
Instructions:
- In a large bowl, beat the butter and sugar until light and fluffy. Add in the lemon peel, eggs, and lemon juice, and beat until combined.
- In another bowl, whisk flour, oats, baking powder, and salt. Gradually beat this into the other mixture. Refrigerate for about 2 hours or until it is firm enough to shape.
- Preheat your oven to 375 degrees F. Use tablespoons to shape the dough into balls and place them 2-inches apart on a parchment paper-lined baking sheet. Sprinkle sugar onto the cookies and then press flat.
- Bake for about 6 to 8 minutes or until edges are a light brown color. Let cool and enjoy!
