Ingredients:
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 1/4 cup butter, melted
- 4 ounces cream cheese
- 1 large egg
- 1 box of brownie mix
- Chocolate for melting
Instructions:
- Preheat oven to 350 degrees F. Using a hand mixer and a medium sized bowl, combine the peanut butter, powdered sugar, and vanilla until it is combined and fluffy. Roll the mixture into one-inch balls and place them on wax paper to the side.
- In a separate bowl, combine the brownie mix, melted butter, cream cheese and egg. This mixture will be moist.
- Scoop the brownie mixture onto an ungreased cookie sheet, using a small scoop. Make sure the scoops are not too large, but round and uniform.
- Bake the cookies for 12 minutes, alternating from top rack to bottom rack halfway through.
- After the cookies are out of the oven, place one of the pre-rolled peanut butter balls onto the center of each cookie and allow them to cool for a few minutes.
- In a glass bowl, melt the chocolate in the microwave in 15 second increments.
- Use a teaspoon to spread a layer of melted chocolate over the top of each cookie and allow to cool long enough for the chocolate to set!
