Ingredients:
- 1/2 cup of unsalted melted butter
- 1/2 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup canned pumpkin puree
- 1 and 1/4 cups all purpose flour
- 1 and 1/2 teaspoons pumpkin pie spice
- 1 and 1/2 teaspoons cinnamon
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup butterscotch chips
- 1/3 cup white chocolate chips
Instructions:
- Preheat your oven to 350 degrees F. Line a baking pan (8×8 or 9×13) with parchment paper and grease it. Prep pumpkin puree by placing it on a paper towel and blotting it lightly with another paper towel to remove some of the moisture. Repeat this process once more with fresh paper towels. This will help make sure the bars aren’t too wet after baking!
- Whisk together the melted butter, brown sugar, and granulated sugar in a large bowl until fully combined. Then whisk in the egg, vanilla, and pumpkin puree.
- In a separate bowl, pour the baking powder, flour, spices, and salt and combine it. Add this mixture to the wet ingredients and stir with a rubber spatula until it is completely combined. Fold in the butterscotch chips and the white chocolate chips.
- Pour the batter into the baking pan and spread to an even layer. Bake for 23-28 minutes, until the top is dry and a toothpick inserted into the center comes out with no raw batter. Allow to cool. You can also put some cream cheese frosting on top for a delicious topper!
