Ingredients:
- 1 cup creamy peanut butter
- 1/3 cup cocoa powder
- 1 cup granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 cup semi-sweet chocolate chips (optional)
- sugar or coarse sea salt for topping (option)
Instructions:
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or silicone baking mat!
- In a large bowl, combine the peanut butter, cocoa powder, sugar, beaten egg, vanilla extract, baking soda, and a pinch of salt. Stir well until all components are fully integrated and the mixture is smooth. Fold in chocolate chips if you are using them.
- Using a spoon or cookie scoop, form the dough into balls about 1 inch in diameter. Place the balls on the prepared baking sheet, spaced about 2 inches apart. Flatten the balls slightly with the back of the spoon or your fingers.
- Bake in the oven for 8-10 minutes, or until the edges are set and the center looks slightly underbaked. They will firm up as they cool, so be careful not to overbake!
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. ENJOY!
