Ingredients:
- For the Crust
- 2 sticks salted butter, cut into small cubes
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon kosher salt
- For the filling
- 1 and 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 4 large eggs
- Grated zest and juice of 4 medium-sized lemons
- Powdered sugar for topping
Instructions:
- Preheat the oven to 350 degrees F. Butter (or spray) a 9×13 inch baking pan and line it with parchment paper. Also butter the parchment.
- For the crust, stir together flour, granulated sugar, and salt in a large bowl. Add the butter and use a pastry cutter to cut it until the mixture looks like fine crumbs. Press the mixture into the pan and make sure it is in an even layer. Bake for about 20 minutes, until the edges are golden.
- For the filling, stir together the granulated sugar and flour in a medium bowl. Add the eggs and whisk until combined. Add the lemon zest and juice, whisk until combined. Pour the filling into the hot crust.
- Bake the bars until the filling is set, about 2o minutes. Let cool, then refrigerate for at least 2 hours.
- Remove the bars to a cutting board. Dust with your desired amount of powdered sugar and then slice into bars!
