Ingredients:
- 3/4 cup sugar, divided
- 2 and 1/2 cups all-purpose flour
- 1 cup cold butter, cubed
- 12 oz. white baking chocolate, finely shopped, divided
- 1/2 cup finely chopped maraschino cherries, patted dry
- 1/2 teaspoon almond extract
- 2 teaspoons shortening, coarse clear and red sugars
Instructions:
- Preheat your oven to 325 degrees F.
- In a large bowl, combine flour and a half cup of sugar. Cut in the utter until crumbly. Knead in cherries, 2/3 cup white chocolate and extract until the dough forms a ball.
- Shape into 3/4 inch balls and place about 2 inches apart on ungreased baking sheets.
- Flatten the dough balls slightly with a glass dipped in remaining 1/4 cup of sugar.
- Bake the cookies for about 10-12 minutes until the edges are lightly browned. Remove and let cool!
- Melt the shortening and remaining white chocolate in a microwave, stirring until smooth.
- Dip a half of each cookie into the chocolate and allow the excess to drip off. Place on wax paper and sprinkle with the coarse sugar, then let it set. Store in airtight container!
