Ingredients:
- 1 tablespoon unsalted butter
- 2 large egg yolks
- 3 and 1/2 ounces dark chocolate
- 1 tablespoon white sugar
- 1/4 cup water
- 1 pinch of salt
- 1/2 cup chilled heavy whipping cream
Instructions:
- Chop chocolate into small pieces and set aside with butter.
- Get a metal mixing bowl and add the egg yolk, sugar, water, and salt. Cook on stovetop directly over medium-low heat and whisk until the mixture is thick and foamy. Once it is thick and hot, add the chocolate and butter, whisk until all chocolate is melted.
- Whisk cold cream until medium peaks form. Transfer about 1/3 of chocolate mixture into whipped cream and fold with a spatula until nearly incorporated. Fold in the remaining chocolate, gently. Try to keep as much air in the mixture as possible.
- Transfer into 4 serving dishes, wrap, and chill at least 1 hour before serving!
