Ingredients:
- For the Crust
- Cooking Spray
- 2 and 1/4 cups crushed gingersnap cookies
- 1/2 cup unsalted butter, melted
- 2 Tablespoons granulated sugar
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon kosher salt
- For the Filling
- 3 (8oz) packages of cream cheese, softened
- 3/4 cup granulated sugar
- 1/2 cup sour cream
- 1 teaspoon pure vanilla extract
- 3 large eggs
- 3/4 cup canned pumpkin purée
- 1 teaspoon pumpkin pie spice
Instructions:
- For the Crust
- Preheat oven to 350 degrees F. Line a 13×9 baking dish with parchment, leaving in overhang on the long sides. Grease with cooking spray.
- In a food processor, pulse gingersnap cookies until fine crumbs form, about 45 seconds. Add the butter, sugar, pumpkin pie spice, and salt and pulse until mixture resembles wet sand, about 30 seconds more. Pour into the prepared baking dish. Pat down with your hand or a flat utensil.
- Bake crust until deeply golden brown, about 10 to 12 minutes. Transfer to a wire rack and let it cool completely! Reduce oven temperature to 325 degrees F.
- For the filling
- In a large bowl of a stand mixer with whisk attachment (or handheld mixer), beat cream cheese on medium-high until smooth. Add sugar, sour cream, and vanilla and beat until smooth. Scrape down the bowl. Add eggs and beat to blend!
- Spread pumpkin purée on a large plate, then pat dry with paper towels to remove most of the moisture. Transfer the purée to a medium bowl. Scoop 3/4 cup cheesecake batter into the bowl with the pumpkin purée. Add pumpkin pie spice and whisk until incorporated.
- Pour remaining cheesecake batter over crust in an even layer. Dollop the pumpkin batter in about 8 scoops across top of cheesecake batter. Using the back of a fork, swirl batters about 6-7 times to create desired pattern.
- Bake the bar until the top is dry, edges are slightly browned, and the center slightly jiggles (about 30 minutes). Let it cool on a wire rack for about 10 minutes. Refrigerate anywhere from 1 hour up to 24, until it’s set.
