For the Toffee Bars
Ingredients:
- 1 cup butter, softened
- 1 cup packed brown sugar
- 1 teaspoon vanilla
- 1 egg yolk
- 2 cups all-purposed flour
- 1/4 teaspoon salt
- 2/3 cup milk chocolate chips
- 1/2 chopped nuts, if desired
Instructions:
- Heat oven to 350 degrees F. In large bowl, mix butter, brown sugar, vanilla and egg yolk. Stir in flour and salt. Press in ungreased rectangular pan, 13 x 9 inches.
- Bake bars 25 to 30 minutes or until very light brown (crust will be soft). Immediately sprinkle chocolate chips on hot crust. Let stand about 5 minutes or until chocolate is soft; spread evenly. Sprinkle with nuts.
- Cool bars 30 minutes in pan on wire rack. For bars, cut into 8 rows by 4 rows.
For the Melting Moments
Ingredients:
- 1 cup unsalted butter, partly melted
- 2 teaspoons vanilla extract
- 3/4 cup icing/powdered sugar
- 1 and 1/2 cups cornflour/cornstarch
- 1 cup plain/all-purpose flour
- 1/4 teaspoon salt
Instructions:
- Preheat the oven to 325 degrees F. Line a baking tray with parchment paper or a silicone mat, and set aside.
- In a large mixing bowl, whisk together the butter, vanilla, and sugar until creamy and combined.
- Add the cornflour, flour, and salt, and mix to form a smooth, soft dough.
- Roll the dough into small balls, and place them onto the prepared baking tray. Press them down with the tines of a fork. Freeze until solid – about 10-20 minutes.
- Bake for 15-20 minutes or until firm and just starting to color around the edges (they’ll still be very pale). Allow to cool for 5-10 minutes before transferring them to a wire rack to cool completely.
